Happy Early Spring! Did anyone else love the 77° weather we had on Sunday? That warm sunshine was a welcome reminder that spring is just around the corner. In honor of the beautiful day, I made a delicious and nourishing side dish designed to support the spleen and stomach—a vital aspect of Traditional Chinese Medicine (TCM).

Nourishing our spleen and stomach is not only beneficial for gut health and increasing energy, but it also plays a significant role in fertility, helping to improve our ability to conceive and sustain a healthy pregnancy. Ingredients

  • 1 small butternut squash

  • 3-4 cloves of garlic

  • 1 cup barley

  • 2 1/2 cups bone broth

  • 1 cucumber

  • 1 red bell pepper

  • 1 bunch cilantro

  • 1/2 red onion (rinsed)

  • Feta cheese (optional)

  • Salt & pepper to taste

  • Hot honey (a light drizzle)

  • Extra virgin olive oil (EVOO)

Instructions

  1. Roast the Butternut Squash & Garlic

    • Preheat the oven to 350°F.

    • Drizzle butternut squash and garlic cloves with avocado oil, salt, and pepper.

    • Roast for 20-30 minutes or until fork-tender.

    • Remove from the oven and let cool.

  2. Cook the Barley

    • Bring the barley and bone broth to a boil.

    • Lower to a simmer and cook until tender (cooking time varies from 10-20 minutes depending on the barley type).

    • Strain and let cool.

  3. Prepare the Vegetables

    • Chop the cucumber, red bell pepper, cilantro, and red onion.

    • Add them to a large bowl along with the cooled barley and butternut squash.
